Ingredients 

For the tofu

  • extra firm tofu

For the peanut sauce

  • peanut butter
  • hoisin
  • water

To assemble the spring rolls

  • sheets rice paper
  • vermicelli noodles
  • cucumber
  • lettuce

Instructions

Prepare the peanut sauce

  • In a bowl, combine peanut butter, hoisin sauce, and water. Stir until the ingredients are well incorporated and smooth

Assemble the spring rolls

  • Fill a large bowl with warm water. Quickly dip a rice paper sheet into the water for no more than 5 seconds, then place it flat on a plate.
  • Arrange your fillings neatly on the rice paper.
  • Once the sheet has softened, fold in the sides and gently roll it up, keeping the roll tight but delicate.
  • Serve immediately with the peanut sauce on the side for dipping.
